Pickled Herring salad with Pomegranate vinaigrette

  • 3 oz. pickled herring
  • 2 cups fresh lettuce
  • 1 cup Pomegranate seeds.
  • 1 tomato
  • 1 cup champagne vinaigrette
  • 1/4 cup pesto oil

Instructions:

  1. Toss the lettuce in the vinaigrette.
  2. Sprinkle the seeds and arrange on the plate around the lettuce.
  3. Place the herring on top of the lettuce, drizzle the plate with pesto oil.
