Avocado and Pomegranate Salad(4 servings) - 1 large ripe Pomegranate, cut in halves.
- 6 oz. black grapes, cut in halves.
- 2 avocados
- 1 tbsp. Lemon juice
- Fresh mint leaves as garnish
Dressing - 4 tbsp. white vinegar
- 2 tbsp. orange juice
- Salt and black pepper to taste
- 1 tbsp. honey
- 2 tbsp. olive oil
- 1 tbsp. peanut or sunflower oil
Instructions: - With a hand beater, mix vinegar, orange juice, salt, pepper and honey.
- Add olive oil and peanut or sunflower oil, stirring slowly until it gets creamy.
- Add mint leaves and stir.
- Put the Pomegranate seeds in a bowl, add the black grapes.
- Cut the avocados in halves and peel.
- Cut the avocado halves in thin slice to form a fan shape.
- Sprinkle some lemon juice over the avocados.
- Use fresh mint leaves as garnish.
