Avocado and Pomegranate Salad

(4 servings)
  • 1 large ripe Pomegranate, cut in halves.
  • 6 oz. black grapes, cut in halves.
  • 2 avocados
  • 1 tbsp. Lemon juice
  • Fresh mint leaves as garnish
    Dressing
  • 4 tbsp. white vinegar
  • 2 tbsp. orange juice
  • Salt and black pepper to taste
  • 1 tbsp. honey
  • 2 tbsp. olive oil
  • 1 tbsp. peanut or sunflower oil

Instructions:

  1. With a hand beater, mix vinegar, orange juice, salt, pepper and honey.
  2. Add olive oil and peanut or sunflower oil, stirring slowly until it gets creamy.
  3. Add mint leaves and stir.
  4. Put the Pomegranate seeds in a bowl, add the black grapes.
  5. Cut the avocados in halves and peel.
  6. Cut the avocado halves in thin slice to form a fan shape.
  7. Sprinkle some lemon juice over the avocados.
  8. Use fresh mint leaves as garnish.
